A couple weeks ago I made Crock-Pot lasagna and promised I would get it on the blog, so here it is- better late then never, right!?
Crock-Pot Lasagna
What you’ll need:
3 cans of crushed tomatoes {14.4 oz each}
3 cloves of garlic, finely chopped or pressed
2 Tbsp of dried oregano
½ Tsp of kosher salt
¼ Tsp of red pepper flakes
¼ Tsp freshly ground black pepper
2 containers of fresh ricotta {15 Oz each}**
2 cups of grated mozzarella
¼ cup grated parmesan
12 lasagna noodles {approx ¾ of a 1 pound box}
6 cups of baby spinach**
Directions:
*In a medium bowl, combine the tomatoes, garlic, oregano, salt, red pepper flakes & black pepper.
*In a separate bowl, mix ricotta, 1 cup of the mozzarella & all parmesan.
*In the bottom of the crock-pot, spread a thin layer of your sauce.
*Top with 3 noodles {breaking to fit as necessary}. Spread about 1 cup of sauce over the noodles and layer with 2 cups of spinach & 1-1/2 cups of the cheese mixture- smooth out before repeating layers of noodles, sauce, spinach & cheese mixture.
*Top with remaining 3 noodles, sauce and 1 cop of mozzarella
*Cook on low, covered, until the noodles are tender- test tenderness from the center of the dish.
*Allow 2 hours if cooked on High and 3 hours if cooked on Low.

**After reading what you need and what not- note that when I made it here in my house it HAD to include meat. SO since I have everything except the spinach, I went ahead and made a beef and Italian sausage meat mixture to put in place of the spinach. ALSO- for the next time, I think I will cook it on the low option for 3 hours allowing all of the flavors to really cook together.
**AND, one more thing, also next time I will make a cottage cheese & egg mixture in place of the ricotta. The ricotta was good, but I would just like to change it up the next time. Let me know if you have made this and how you made improvements too it, it's too easy to NOT make.
p.s. it tastes just as good as it looks in the pictures too!
