Greek Orzo Salad
Orzo Pasta (1 cup)
Spinach (sliced thin)
Red Onion (diced)
Olives *I prefer Kalamata* (sliced)
Feta Cheese Crumbles
Cherry Tomatoes (quartered)
Grapeseed or Olive Oil (1/4 cup)
Red Wine Vinegar (2 Tbsp)
Lemon Juice (dash or two)
Combine all Salad Ingredients listed above, measure to taste.
Mix together with cooked and drained Orzo.
In a separate container mix together Dressing Ingredients listed above.
Pour dressing over salad mixture. Toss salad until completely coated, chill and serve!
